Thursday After Work

I am going to try to do more posts throughout the week...not just weekend recaps. I think it is important for Luci to know what went on in our lives during the work week too!

After work, Mitch and I went to pick Luci up at school. Once we got home, I started on dinner. I made mini meatloaves. I used Pioneer Woman's recipe and halved it...and instead of making one big loaf, I made 3 mini ones...just so they would cook faster!


I know it doesn't look incredibly great, but it is realllly good...and I am not even a huge meatloaf fan!


While I was cooking, Luci had her after-school snack (cheese stick) and played around with her toys. About 30 minutes into the meat loaves baking, Luci started getting a little cranky, so I decided to go ahead and feed her the parts of dinner that were already finished cooking! She had lots of green beans, a few black berries, and some cheesy, broccoli noodles. After she finished her dinner, we let her have part of  a cupcake for dessert! Kerri and Taylor brought us cupcakes back from Bliss yesterday, and they are sooo yum!!! We have strawberry lemonade cupcakes and cinnamon bun cupcakes!!!

After her after-dinner treat, we gave her a quick bath, and then Mitch and I sat down to eat our dinner. Luci sat with us for a bit and nibbled on the meatloaf!

After dinner, I ran to Old Navy to do a little shopping because I had a coupon and some Super Cash while Mitch and Luci stayed home and played puzzles! I got some pretty decent deals I thought! I bought me two shirts and a pair of work out shorts, Luci 2 shirts, a pair of shorts, and a dress, and Mitch some swim trunks, and a pair of shoes all for $130! It is hard putting a new wardrobe together every few months for Luci. It gets expensive. I have to find deals and coupons and use them when I can!

After I got home and showed Mitch and Luci the things I bought them, I put Luci to bed, and Mitch started the dishes. After Luci was asleep, Mitch and I watched a little T.V. and then went to bed ourselves.

There you have it...our Thursday after work! :-))))))

Pioneer Woman's Meatloaf

Ingredients:
Meatloaf:

■1 cup Whole Milk

■6 slices White Bread

■2 pounds Ground Beef

■1 cup (heaping) Freshly Grated Parmesan Cheese

■1/4 teaspoon Seasoned Salt

■3/4 teaspoons Salt

■Freshly Ground Black Pepper

■1/3 cup Minced Flat-leaf Parsley

■4 whole Eggs Beaten

■10 slices Thin/regular Bacon

Sauce:

■1-1/2 cup Ketchup

■1/3 cup Brown Sugar

■1 teaspoon Dry Mustard

■Tabasco To Taste

Preparation Instructions:

Preheat oven to 350 degrees. Pour milk over the bread slices. Allow it to soak in for several minutes.

Place the ground beef, milk-soaked bread, Parmesan, seasoned salt, salt, black pepper, and parsley in a large mixing bowl. Pour in beaten eggs.

With clean hands, mix the ingredients until well combined. Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!)

Lay bacon slices over the top, tucking them underneath the meatloaf.

Make the sauce: add ketchup, brown sugar, mustard, and hot sauce in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.

Bake for 45 minutes, then pour another 1/3 of the sauce over the top. Bake for another 15 minutes. Slice and serve with remaining sauce.
