I figured it had been a while...and everyone knows I love to talk about food...so here is another post dedicated to talking about food! Ha!
Luci's appetite is definitely getting stronger on some days! I think she is going through a growth spurt. Most of the time, Luci eats like a bird. She just wants to eat a little bit, all day long. Two bites here; Two bites there. I am really trying to work with her on that...because it drives me insane! lol!
Breakfast is always on the go during the week. Lunch is at school/work. So, I try to make sure that every night we sit down together at the table to eat dinner together. Both Mitch and I grew up that way. Not all dinners are perfect...and sometimes she gets sent away from the table (multiple times), but the point is, not only are we spending time together, we are working on manners. I can't tell you how many times we repeat, "Sit up in your chair. Feet off the table. Use your napkin. Luci, you know we don't eat with our hands." But, she is learning...and is getting much better...sometimes! ;-)
What is she eating these days? Her taste is definitely seeing some changes. Some things she used to eat, she won't touch anymore. Some things she hated, she is getting better at eating.
Favorites: cheese, cottage cheese, applesauce, peas, carrots, chicken, turkey, ham, meatballs, pasta, cereal
Least favorites: Most fresh fruit. Most fresh veggies.
Favorite Snacks: applesauce pouches, go-gurt pouches, cheese sticks, gold fish crackers, fruit snacks, and marshmallows (She could eat her weight in marshmallows)
Favorite Drinks: Milk, decaf tea, juice, flavored water
Least Favorite Drink: Plain water. Now obviously, she has to drink water. She drinks it all day at school (except lunch) and she drinks it when she is playing outside, etc. It is just not her favorite.
Things that she eats now that she used to not like: Eggs, mashed potatoes (still very rare though), peaches
What does a typical dinner for her look like?
Well, there are a couple of different versions. If I make something for dinner that I know she won't like or that is too spicy (chili, cajun chicken, etc.), she usually gets deli turkey/ham, peas/carrots, cottage cheese, fruit...something like that.
This was sometime last week...I think Mitch and I had soup that night...
Most of the time, I try to make "family pleasing meals", and she gets served that for dinner.
Just a typical spaghetti night...
One of the things I have been doing (usually once a week) is making Pantry/Freezer Pasta. Basically, I just clear out what veggies/meat/pasta we have and make up a big pasta dish. It is a great way to get her to eat things that she normally wouldn't eat on its own.
For instance...last night was Pantry/Freezer Pasta night. I cooked some pasta, added in some broccoli, tomatoes, green chilies, (I scooped out her portion before I added it in), bell peppers, shredded chicken, and a little montery jack cheese. If I have spinach, I will usually throw that in...or red/yellow peppers...or sometimes we have no meat...or sometimes we have a different cheese...or I'll bake it with ricotta or cottage cheese...squash and zucchini are really good too...It is just a quick way to clean up the pantry, fix a quick meal, and get her to eat lots of veggies!

I try to cook most week nights. Sometimes they are really nutritious meals...and sometimes they are not. It just varies on my mood...and if I put something on in the crock pot ahead of time! My crock pot gets used all.the.time. I don't know what I would do without it!! I like to try new things and new recipes. Cooking is fun for me (when I have time) and is kind of therapeutic on stressful days! Luci enjoys being a helper in the kitchen. Whether it is pouring in a cup of water, stirring something in the bowl, or making cupcakes, she loves to help!
Sometimes I really appreciate the help...
And sometimes I don't... :-)
And sometimes...we just like to get a donut!
