As many of my blog followers, friends, and family know, I collect Hard Rock shot glasses!! I have received several this summer from some of my amazing friends and family!!!
For those of you who don't know about my collection..
I started collecting the shot glasses on my first visit to a Hard Rock Cafe with my best friend Tasha when we were 16. It was in Nashville. Since then, every time I am in a city with a Hard Rock casino/cafe/hotel I make a point to stop by to pick up a glass. Lots of the glasses in my collection have come from friends that have visited them and picked them up for me!!! Mitch has even paid for a $40 cab ride on a business trip just to pick up an $8 shot glass for me!! I love collecting and I love that I have so many friends and family that pick them up for me!!
I had someone say to me once "you know you could just go online and order all of them"....yeah, I know that...but what would be the fun in that?!?!!?
Here are my shot glasses that I have got this summer...
I picked up a Washington D.C. glass when we were up there...this makes 2 of my collection! My good friend Vic got me one several years ago when she was up there!
My friend and colleague Rita picked this one up for me when her and her hubs went to the Cayman Islands.
I got these TWO shot glasses from Kerri when she went on an amazing cruise with her boyfriend Taylor and his family!! These are from Costa Maya and Cozumel!!
Mitch picked up this St. Louis glass for me when he went on his Father's Day trip with his Dad and little bro. (Thankfully this one did not require a $40 cab ride!)
My cousin Jocie picked this one up for me when she went to Destin with her bf and his fam!!!
And now...for my most recent and first European glass...ROME!!!!! My Aunt R and Uncle J just got back from 2 week trip in Italy and snagged this Rome glass for me!!! I love it!!!!
My collection proudly boasts 25 now!!! I am so lucky to have such thoughtful friends and family!!!

Summer Vacay 2011 Recap!
We went for a week to Branson this past week. Mom, Dad, Nana, Quinn, Mark, Brendon, Ellie, Mitch, myself and Luci...and we all stayed together in a 3 bedroom condo!!! It got crazy at times, but we all had a really good time!! Sometimes we did things together and sometimes we did things with just the 3 of us. My family absolutely loves going to Branson. If you haven't ever been before or only a few times, it can get overwhelming if you don't know back/side roads to help with the traffic. I have been probably been on average 3-5 times per year for 25 years and Mitch has been almost that much, so we really know our way around. Want to know how many shows I've been to? Three. I don't particularly care for that and most ppl that have never been to Branson think that is all there is to do there! We had a BUSY, RUSHED, trip to D.C. and we came back exhausted...so this trip was more about relaxing and spending time together...Branson is the perfect place for that!!!! So, what did we do???...
I read cookbooks out on the balcony...
Luci got to go "Build a Bear" for the first time!
We celebrated Mitch's Birthday at Silver Dollar City...
Then later that night, Mom babysat while Mitch and I went out to eat at the Branson Landing (similar to The Promenade in Rogers, but it is on the river) and enjoyed a date night for his Birthday!
We went to an indoor waterpark...but Luci was scared to death...so we left after 45 min.
However, she LOVED swimming at the different pools at the condo! She is quite the little fish!
We did LOTS of sunbathing! (ok, not really Luci...I did...but you're not getting pics of that! And don't worry...she was slathered in sunscreen about every 20 minutes any time we were outside!)
Luci got to play putt-putt golf for the first time!
We went back to Silver Dollar City for a 2nd time! (we usually get season passes every year so we can just go for a few hours at a time)
We all went together to Ripley's Believe it or Not! (Dad and B with "world's tallest man"!!)
Oh yeah...and I did some shopping too...lots!!...I hit up 2 outlet malls and the Landing!!!

We had a great time and I can't wait for our next trip...which knowing us...won't be too long from now!!!

A Weekend of Good and Bad
This weekend was good for a many reasons...
We got great finds at the Farmer's Market and ate donuts afterwards...
Luci went and played with Brendon and Ellie...
Luci had lots of time to hang out with Daddy...
Luci had lots of time to hang out with Daddy because Momma was sick...bad sick...ugh. Why am I sick all of the time?!?! Appt with the ENT today...hoping for some answers. I've got to get better for this girl!!!

Confessions of a "working outside the home" Momma
Let's face it, most Momma's work full-time whether it be in or outside of the home. On the other hand, I consider myself to be a "full-time" mother even though I am away from my daughter 10 hours a day. We are all working Mom's in some aspect or another. My life just happens to lead me to working outside the home.
I decided to make a list of "confessions"...not to be judged or analyzed, but just for some simple insight to a full-time "working outside the home" Momma who is in the early stages of motherhood.
-I love Luci's paci...probably more than she does. I keep delaying taking it away for a couple of reasons...a. I like the fact that she takes comfort in something when I am not around her for 10 hours a day. It's secure. It's always there. b. I mainly like the fact that I can plug the hole in the car when I need to. :-)
-I love the fact that Luci is really getting into potty training. However, truth be told...diapers are way easier...and faster.
-Sometimes I feel like all I do when I get off of work is come home to a tired, cranky, kid...so sometimes discipline is overlooked. I hate feeling like I'm discipling the second I get off of work.
-I try not to "sweat the small stuff." If Luci only wants cheese for dinner...eh, I'm too tired to fight with her over it. I'll just sneak some veggies in when she's not looking! :-)
-If it is a "battle of the wills" over something important (key word being important), this kid isn't winning. However, I am not going to have a "stand-off" with her about anything. I would be more likely to scoop her up, issue out a time-out, or whatever else is necessary. That does not work in our household. Our life is not going to be put on hold because she refuses to do something. There will be consequences. Period.
-Luci watches television. I know, I know...call the Mommy Police now...:-) Luci has two, sometimes 3 shows that are approved in the Minnick household. Mickey Mouse Clubhouse, Seasame Street, and Dora. Right now, anything else is no. I know there are PLENTY of other good, age-appropriate shows, but by just having a handful, it keeps her from wanting to watch multiple shows, multiple times a day. She gets to watch one episode in the morning and maybe another a night. Weekends (especially when she or I are sick) allow a few more.
-I still check on Luci during the night. I hear every noise, every cry, and every movement.
-Luci sleeps between Mitch and I every night. She always starts out in her own big-girl bed...but sometime during the night, she always ends up in our bed. As long as Mitch and I have alone time, we are perfectly fine with her sleeping between us. We only see her from 6:45am-7:40am and from 5:30pm-8ish pm...so again, this is a small detail for us...and we try not to "sweat the small stuff".
-Sometimes in the night if I wake up and Luci isn't in bed with us yet...I really want her to hurry up and come get in bed with us. I miss her soooo much during the day, so I really love being with her as much as possible...even if it's the middle of the night.
-We are not above bribery. If Luci is on her best behavior at Wal-Mart, she gets to play "the claw"...which is the game where you try to win a stuffed animal. Luci gets "potty stickers" for going in the potty. We give her an M&M for taking meds such as antibiotics.
-Luci is VERY scheduled...which I love...however, I want her to learn to adjust when a schedule is not always available...such as vacations or long weekends. On vacations, she goes where we go. Naptime is in the car or the stroller, and snacks sometimes serve as meals if she is hungry before we are. That being said, 95% of the time, Luci is on a strict schedule.
-I have a love/hate relationship with daycare.
Hate-
In the winter, she gets sick...which in turn means I get sick.
Not everything is done how I want it done
She picks up bad habits...hitting, pinching...
She is a recipient of bad habits...getting bit
I am not there to kiss every boo boo, wipe every tear, feed every meal, take her to the potty
Love-
My kid is getting sick now so that when she is in kindergarten, she will hopefully not get as sick!
She is making friendships, learning to share and play with others
She is learning to be independent
She is watching other kids and picking up good habits such as sharing, going to the potty, talking, singing
- I want Luci to be independent and learn how to be her own person and stand up for herself...but that being said...there is a "momma bear" deep inside of me that will come out whenever I feel necessary.
We pray with Luci every morning in the car on the way to school, before meals, and before bedtime. I want Luci to know that every day we are seeking God first and foremost. I want her to say when she is older that she heard her Mom and Dad calling out to God on behalf of her and our family. We are teaching Luci to be thankful for our blessings. We are teaching her to pray for others. Joshua 24:15- ...choose this day whom you will serve...but as for me and my house, we will serve the Lord. Proverbs 22:6- Train up a child in the way he should go: and when he is old, he will not depart from it.

4th of July Weekend- Sick, Chuck E Cheese, & Fireworks!!
When Luci got home from daycare on Friday, she was running a fever. The fever lasted most of the weekend and on to Monday. It would break for a few hours and then come back...not sure what is up.
Poor sick girl...
We ended up being lazy on Saturday and just trying to get her to rest. It was sooo hot on Saturday that I didn't want to heat up the house with the stove, so we grabbed a quick dinner at Cheddar's.
Sunday, we got up early and headed to Tulsa for our nieces 3rd birthday party at Chuck E Cheese!!!!! It was A's first time @ Chuck E Cheese as well as Luci's!!! They had a blast!!! Luci loved putting the tokens in and then grabbing the tickets once the game was complete. It was so nice going on a Sunday afternoon because the place was not busy at all!!!
Sunday evening we had grilled burgers and hot dogs with the fam!!! It was super yummy and we had a good time visiting with everyone!!!
Monday we got up and headed to IHOP for breakfast! After breakfast we made a quick trip to Lowe's so Mitch could get a few screws for a project he was doing for me!
Luci found a bench just her size!! I swear she reminds me of Forest Gump in this picture! LOL!!
Once we got back home, Luci went down for a nap and Mitch and I got busy! Ok, not like that!! Get your head out of the gutter!!! We got busy turning our guest room into a semi-play room for Luci. I was tired of the living room looking like Toys R Us, and her bedroom was running out of room, so we did some rearranging and packing up stuff in the guest room. I had Mitch screw our bookshelf that is in the guest room into the wall so she could not pull it over on her. We moved her kitchen, shopping cart, stuffed animals, riding horse, and all books into the new play-room. I imagine more stuff will go that direction soon!!
After Luci woke up from her nap, we played around and then I made dinner...Hawaiian pan fried chicken, buttery potatoes and steamed broccoli! After dinner we headed to Braum's for dessert (where I had some of the best blackberry vanilla almond frozen yogurt!! Yum Yum!!!) and then downtown to see the fireworks!! We ended up at a church on the hill instead of actually being at the river. It was a perfect spot. We could see the fireworks really well, but it wasn't so loud that Luci was scared. She LOVED the fireworks!!!!
The girl who hasn't eaten much of anything the last 3 days due to being sick sure brightened up when she saw Daddy's large ice cream cone!!!!

~Recipe- Fruit Dip~
Becky, my co-worker, friend, and sharer of recipes, gave me this recipe a few weeks ago and I tried it out last night! It was fabulous!!!
Fruit Dip
Ingredients:
2 pkgs of cream cheese (softened)
1 cup of powdered sugar
1 tub of Marzotti caramel topping (is usually found in the produce section next to the apples)
1 pkg of Heath toffee bits (I ended up only using half the bag)
Granny Smith Apples
Steps:
Cream together the cream cheese and powdered sugar. Put mixture in bottom of dish for the "bottom layer".
Next, spread Marzotti caramel topping over cream cheese layer. (It helps if you do not refrigerate the topping...it spreads easier...although you must refrigerate after opening if you choose not to use it all)
Next, pour heath toffee bits over caramel layer and lightly press in to the caramel using the back of a spoon.
Last, slice yourself some Granny Smith apples and dig in!! It is a really rich dip, but the tartness of the Granny Smith apples cuts it enough for it to taste absolutely fabulous! Thanks for the recipe Becky!
