I like to eat dirt.

So, I made a Dirt Cake tonight to take to work tomorrow for a birthday party. It was the first time I have ever made this recipe. I took a bite for myself and it was pretty darn good if I say so myself!!!

Dirt Cake

Ingredients:
8oz Cream Cheese
1 cup of powdered sugar
8 oz of cool whip
2 small boxes of Instant vanilla pudding
3 cups of milk
1 pkg of Oreo cookies crushed

1. Mix cream cheese and powdered sugar
2. Fold in cool whip and set aside
3. In new bowl, mix vanilla pudding and milk
4. Stir together both mixtures
5. Layer cookies and filling in pan
6. Refrigerate and Enjoy!!!

Where I'm From

We spent this weekend in my hometown of Paris! We hadn't stayed more than a few hours there in weeks so Mitch and I decided that this would be the perfect weekend to go and stay the weekend with my parents!!

We left Friday after work and immediately stopped for dinner at the place that I worked at all through high school! The catfish still tasted just as delicious as ever! After speaking to just about everyone in the restaurant (because if you are from a small town, you generally know everyone!), we went back to my parent's house for the night. Luci LOVED being doted on by my parent's (her Mimi and PePaw) and my Nana!

Saturday morning, Luci and I slept in a bit and Mitch and my Dad left for golfing! My mom made homemade vegetable beef soup for lunch and we just spent the morning and afternoon hanging out and playing with Luci!

That evening, my mom and Nana prepared dinner for my new brother in-law's birthday! They made oven fried chicken, mashed potatoes, mac n cheese, fresh purple hull peas, fresh fried okra, cheesy bread, and Mississippi Mud cake! It was delish!!!

After dinner, my Nana, Mitch, and I took Luci to the Paris City Park! She had a blast!



The next day, we all got ready and went to church and then relaxed with afternoon naps!!!

It was such an enjoyable, relaxing weekend...and really makes me miss home!

Me and My Crock-Pot are BFF

Tomorrow night we will have another of my favorite EASY suppers! Here is the EASY recipe below!

Swiss Steak

Ingredients:
1 1/2 lbs of Chuck Tender Steak
2 8oz cans of tomato sauce
1 cup of water
1/2 of a bell pepper cut into strips
1/4 cup of onions cut into small pieces
salt and pepper to taste

Put steaks, bell pepper, onion into slow cooker
Pour sauce and water over
Salt and pepper to taste
Cook on low 6 hours (high for 4)

Serve steaks and gravy over rice or mashed potatoes!

So EASY and so YUMMY!

15 Month Stats

Luci had her 15 month well-baby visit today...with shots. She did fairly well. She was not a fan of being weighed (neither is her mother :D ) or being measured. The nurse had to measure her twice because she was throwing such a fit!! However, she did great when the doctor came in to examine her!! He said that she is developmentally right on track!
She of course cried with the shots, but was fine once she was given a lollipop!

Length- 29.5 inches (50th percentile)
Weight- 21 lbs 15 oz (25th percentile)

"Words" Luci can say- DaDa, Momma, Nana, Uh oh, Yay, Na (no), oo ur (good girl)

Miscellaneous Musings

~ We finally sold our bed!...and for the exact price we listed it for!! Our new bed should be delivered in about a week and a half. For now we have the mattresses set on the floor.

~ Some of my Texas family is coming in for a short visit this weekend! Can't wait to see them!

~ Luci is really loving blueberries lately!! She can eat those things like crazy! She is also obsessed with Colby jack cheese sticks. Every day when we get home from work she takes us and points at the refrigerator...that is her sign for "hurry up and get me my daily cheese stick!!"

~ Luci is really enjoying her bath time lately...so much that it is almost a fight every night to get her out. She flails, plays "limp body", and then dissolves into tears. Thankfully, that only lasts just a minute, but it is still frustrating! I guess it could be worse...she could hate bath time...

~ I am a making a 5 cup fruit salad tonight...it is so yummy!!! I am posting the recipe at the bottom of the post!

~ Work has been EXHAUSTING the last two weeks. Hopefully only one more week of this madness and it will slow down. I am sooo ready for fall!

~ After a really HOT HOT HOT summer, the family finally made the decision on next summer vacation...where u ask...WISCONSIN...yeah, I know what you are thinking...the same thing I was...What is there to do in Wisconsin, BUT it actually seems like a pretty cool state!!! In addition to lovely 83 degree weather in July, we are staying at the largest water park resort in the country! (My family is really big into water/theme parks!) The good thing about this is that Luci will be old enough next year to enjoy some of the stuff...and since we will be staying at the resort, we can come and go as we please. Even though it is a year away, we are still really excited to go!! I am also hoping that on our drive up there that we can make a detour through Chicago! Mitch and I have never been and I would love to see a few of the sites!

Five Cup Fruit Salad

Stir together:

1 cup of pineapple chunks (drained and patted dry)

1 cup of Mandarin oranges (drained and patted dry)

1 cup of coconut

1 cup of chopped pecans

1 cup of sour cream

Refrigerate and enjoy!!!

21st Century "Babybooking"

So, I'm pretty sure that no one really cares what the Minnick Family does every weekend but us...but, that is ok with me because this blog is truly for me! I call it 21st century "babybooking". I am not really good at dragging out the baby book, getting a pen, and logging her every move; however, I do enjoy grabbing the laptop and typing out our daily fun and including pics. This blog will help me remember this precious time in our lives with just us and Luci...with that being said...here we go!!

Friday night after work we went to dinner with my parents at Western Sizzlin and then went to Bed, Bath, and Beyond and started our search for comforter/sheets for our new king size bed...to be delivered in a few weeks.

We started Saturday out at FIVE FIFTEEN AM! Luci is working on four teeth and was not too happy when she woke up...ahem, neither was Momma... Well, I got an early start on the day and made cinnamon rolls and bacon. We ate breakfast, and then Daddy went out a little later to mow while Luci went back to sleep (guess who didn't get to go back to sleep). Momma cleaned house and then we all went to Wal-Mart to do our grocery shopping. We came back, ate lunch, and then Luci went down for her afternoon nap (again, guess who didn't get to nap). Momma baked some yummy beer bread, key lime cheese ball, and then started marinating steaks for supper (just call me Betty). We had a great Saturday just relaxing and spending time together! My perfect kind of Saturday! (ok, Mitch doesn't think mowing in the 105 degree weather was relaxing)

Sunday, we went to church, ran a few errands, purchased our comforter, got an orange julius, napped, ate dinner, and here we are now!!!

My life may not be the most exciting life for the typical 24 year old, but I am truly happy spending my time playing peek a boo, cutting up veggies, wondering if Luci is getting enough milk, planning nap times, applying diaper rash cream, checking to make sure we always have a paci on hand, and consoling a teething girl at 5 in the morning. Mitch and I are so thankful that God chose us to be Luci's parents. She is truly the joy of our lives!

Another Supper Favorite

This is another one of my favorite Slow Cooker Recipes!

Chicken Tacos

Ingredients:
* 1 pkg chicken taco seasoning (you can use regular taco seasoning)
* 1 can of rotel (undrained),
* 3-4 chicken breasts
* 1/4 c. water
* 1/4 c. olive oil

Directions:
* Sprinkle the chicken taco seasoning in the bottom of the crock pot.
* Lay the chicken breasts on top.
* Dump the rotel over the chicken.
* Pour the water and oil over everything.
* Cook on low for 4-6 hours.
* Shred Chicken with fork
* Serve with tortillas and your favorite taco toppings.

After I pull the chicken out of the crock pot, I put in like a half of cup of instant rice into the crock pot and cooked it in the leftover juices. We add the rice to our tacos along with sour cream and cheese!

Also, these are a life saver! I hardly ever wash the actual crock! Just pull the bags out and throw away!!! I am all about easy cooking!

After Work

I will be the first person in line to admit that I do NOT live to work...just work to live. I would much rather spend my days chasing Luci around and keeping the house up...Yeah, not the same attitude that I carried 3 years ago, but nonetheless this is who I am now. Unfortunately, I have to work right now at this point in our lives...so, I do what I can to make my after work time with my family as precious as possible!! Since Luci started eating table food, my suppers usually always consist of the use of the crock pot...it is a life saver!!! For instance, yesterday, I put chicken breasts in the crock pot with barbecue sauce and cooked it while I was at work. By the time we got home around 5:30 the barbecue chicken was ready to go. I quickly cooked two side dishes and by 6:00 we sat down to dinner. (Tonight I am putting beef tips in the crock pot for stroganaff. Recipe at bottom of post.) After dinner, we gave Luci a quick bath and got in the car to go to my sister's house for a bit. Luci and I walked around outside for a bit, but it was so hot we couldn't do it for long. After that, we loaded up and ran to Target for diapers and other essentials. Luci loves going shopping, but tires of sitting in the cart after about 30 minutes! She would much rather run free in the store! After Target, we came back home, played toys/books with Luci, and then put her to bed around 9:00. Then, Mitch and I started clean-up from supper. We usually wait until after she is bed so that our time spent with her is not trying to get her out of the dishwasher!! I love my little family and I love spending time with them! I just wish it was more!! Lottery where are you?!?! LOL!

~Slow Cooker Stroganoff~

Mix 2 cans of Cream of Mushroom with one packet of onion soup mix.
Pour over 1.5 lbs of trim stew meat
Cook on low for 6-8 hours or on high for 4-5 hours
During last 20 minutes of cooking, add 1/3 cup of sour cream and stir in.

Serve over egg noodles or rice! Yummy!

Saturdays with Luci

Saturdays used to mean sleeping in late, but Luci knows of no such thing, so our morning started promptly at 6:30!!! I decided to make biscuits, gravy, and bacon for breakfast and it was yummy...I am finally starting to master the art of cooking gravy! LOL! After breakfast, we "lazied" around for a bit and then got ready for the day. We went to a local furniture store and purchased a brand new bed and mattress. When Mitch and I first bought our house, we decided that we just needed a queen bed...boy were we wrong! So, we went and bought our exact same bed, but in King size! LOL! If anyone is interested in our bed...you can see it on Craig's list! We also have listed our guest bed for sale...it is located here!

After our purchase, we went to the Mall, shared pizza and a pretzel, and looked around for a bit.


We came back home and Luci took a nap while Mitch mowed the lawn! After a nice rain shower, we loaded up and went out with friends for a yummy dinner!!! We love to go and go, but it was so nice just to spend a Saturday running errands and spending time together instead of traveling around!

~Daddy Love~


So, Luci has been going through a phase the last few months...Daddy is the best person in the world...and Mommy is crap. Ok, maybe that last part is dramatic, but that's how I feel sometimes!!! I LOVE that she loves her Daddy so much, but geez...it can really wear on Mommy!!! If she's hungry, she wants Daddy. If she's tired, she wants Daddy. If she doesn't get her way, she wants Daddy. Every now and then, Mommy will be her first pick, but those are few and far between lately! I know it is a phase and probably this time next year, it will be "Mommy Love" time, but I want it now!!!!!

This picture was seriously taken when she realized that Daddy was not with me when we got home from daycare. I think I got on to her about something and then she had a melt down...geez!!!
